で「限りのないものは二つしかない。宇宙と人間の愚かさだ。そして前者については確証が持てない。」という意味になります。

Only two things are infinite で「ただ二つのものが無限である、無限のものは二つしかない」です。
infinite インフィニットゥは「無限の、限りのない」という意味の形容詞です。
例：infinite possibilities「無限の可能性」、go into an infinite loop「無限ループに入る」

the universe and human stupidity で「宇宙と人間の愚かさ」です。
the universe で「宇宙」ですね。
human stupidity で「人間の愚かさ」です。
stupidity で「愚かさ」となります。
形容詞形は stupid ステューピドゥ「愚かな」です。
例：stupid movie「くだらない映画」、stupid idea「バカげた考え」

and I’m not sure about the former. で「そして私は前者についてはよくわからない」です。
I’m not sure about ～ で「～についてはよくわからない、～について確かなことは言えない」という意味の言い回しです。
the former は「前者」です。
前述の、the universe and human stupidity の前者、the universe のことですね。
後者は、the latter と言います。

宇宙が無限であることは科学者でも分からないが、人間の愚かさが無限なことは間違いないということですね。

それではまず文節に分けて日本語に訳し内容を理解して下さい。

限りのないものは二つだけだ

the universe and human stupidity,
この宇宙と、人間の愚かさだ

and I’m not sure
そして私は～については解明できていない

about the former.
前者については
