I had this encounter recently where I met the extraordinary American poet Ruth Stone, who’s now in her 90s, but she’s been a poet her entire life and she told me that when she was growing up in rural Virginia, she would be out working in the fields, and she said she would feel and hear a poem coming at her from over the landscape.

And, in fact, can sometimes feel downright paranormal. で「そして、実際、それはまさに超常現象に感じられる」です。
この文は、前回の文の続きです。
創作プロセスでの実に狂おしいほどの気まぐれさ、のことですね。
downright は副詞で「全く、まさに、率直に」という意味で形容詞を強調しています。
paranormal パラ[ノ]ーマルは「超常現象の、科学的に説明できない、オカルトじみた」という意味です。
接頭語 para- は「～を超えた」という意味です。

I had this encounter recently where ～ で「私は～なめぐり逢いを持ちました、つい最近」です。
have an encounter で「出会いの場を持つ、遭遇する」という意味の言い回しです。
encounter はここでは名詞で「出会い、遭遇、めぐり合い」です。
どんな出会いかというと、
(where) I met the extraordinary American poet Ruth Stone で「（その出会いで）私は非凡なアメリカの詩人ルース・ストーンと会った」です。
extraordinary で「非凡な、普通ではない、類い希な、異常な、特別の」という意味の形容詞です。
ここでは人に対して誉め言葉として使われています。
例：extraordinary creative power「並外れた創造力」、extraordinary happenings「異常事態」

そのルース・ストーンという人は
(who) is now in her 90s, but she’s been a poet her entire life で「彼女は今は90代だが、彼女はずっと詩人だった、全人生を通じて」です。
poet で「詩人」です。
日本ではポエマーと言ったりしますがあれはカタカナ英語です。
her entire life は副詞句で「（彼女の）生涯を通じて、生まれてこの方」です。
entire エン[タ]イアーで「全部の、まるまるの、完全な」です。

and she told me that ～ で「そして彼女は私に～と言った」

when she was growing up in rural Virginia, で「彼女がバージニアの田舎で育った時」です。

she would be out working in the fields, で「彼女はよく野良仕事をしていた」です。
ここでの would は過去の短期的な慣習を表して「昔はよく～していた」という意味になります。
be out working in ～ で「外に出て働く」です。
in the fields で「田畑で」となります。

and she said she would feel and hear ～ で「そして彼女によると、彼女はよく～を感じて聞こえた」です。
何を感じて聞こえたかというと、
a poem coming at her from over the landscape. で「詩が、彼女めがけてやってくるのを、遠くの風景の向こうから」です。
feel ～ doing, hear ～ doing の形で「～が…するのを感じる（聞こえる）」です。
come at ～ で「～にとびかかる、かかってくる」という意味です。
例：Come at me with all you got.「全力でかかってきなさい。」
from over the landscape で「風景の向こうから」となります。
