で「そしていつもそのことが私の頭の中にあったんです。自分たちが情熱を燃やすことに懸命に取り組んでいるチームの象徴して、私が思い浮かべるのは、非常に才能ある人々が互いにぶつかり合って、議論し、時に喧嘩し怒鳴り合い、協力し、切磋琢磨する。そしてそのアイデアを磨き上げ、そのようなチームを通して、最後に出てくるのが、とても美しいこれらの石だということなんです。」という意味になります。

And that’s always been in my mind, で「そのことはいつも私の頭の中にあった」です。
that’s は that has been と現在完了の省略形です。
that「そのこと」とは、子供の時の老人と石研磨機の思い出のことです。

my metaphor for a team working really hard on で「私の中での象徴、～に懸命に取り組むチームの」です。
metaphor メタファーは「暗喩、隠喩、例え、象徴」という意味です。
「～を見れば…を思い出す」といったように、二つの全く異なるものを比較・関連付けるもの、という意味です。
チームが何に取り組んでいるかというと、
on something they’re passionate about で「彼らが情熱を持っている何かに（懸命に取り組む）」です。
be passionate about ～ で「～に情熱を持っている、～に夢中である」です。

is ～ で「（私の中でのその象徴は）～ということだ」です。

どんなことかというと、
it’s that it’s through the team, で「それは（～ということ）、それはそのチームを通して～」

through that group of incredibly talented people で「最高に優秀な人たちのそのようなグループ（が～するのを）通して」

bumping up against each other, で「互いにぶつかり合ったり」
having arguments,「口論したり」
having fights sometimes,「時には喧嘩もし」
making some noise,「騒ぎ立てて」
and working together,「そして協力し合って」
they polish each other. で「互いに磨き合い」

And they Polish the ideas で「そして彼らはそのアイデアに磨きをかける」

and what comes out are で「そして、最後に出てくるものが～である」
these really beautiful stones. で「これらのとても美しい石たち」です。
