SJ: You know, ultimately it comes down to taste. It comes down to taste. It comes down to trying to expose yourself to the best things that humans have done. And then try to bring those things in to what you’re doing. I mean, Picasso had a saying, he said: good artists copy, great artists steal.

SJ: You know, ultimately it comes down to taste. It comes down to taste. It comes down to trying to expose yourself to the best things that humans have done. And then try to bring those things in to what you’re doing. I mean, Picasso had a saying, he said: good artists copy, great artists steal.
で「ボブ・クリンジリー：でもどうやってその正しい方向を見定めるのですか？　スティーブ・ジョブズ：それはそうですね。結局のところセンスということになると思います。センスです。人類が成し遂げてきた最高の作品たちに触れるよう努力することが大事です。そしてそれらのものを自分がやっていることに取り入れていくことです。例えばピカソがこんなことを言っています。優れた芸術家は模倣し、偉大な芸術家は盗む、と。」という意味になります。

インタビューワーのボブ・クリンジリーが質問します。
But how do you know / what’s the right direction? で「でもどうやって～を知るのですか？その正しい方向が何かを」です。
how do you know ～ ? で「～をどうやって知るのですか？」です。
what is the right direction で「その正しい方向がどこかを」です。
which とも言えますが、which の方が限定された選択肢から選ぶというイメージになります。
例：
What is his nationality?（彼の国籍は全く予想できないとき）
Which is his nationality?（ある程度予想できて選択肢が絞られている）

You know, ultimately it comes down to taste. で「そうですね、結局のところは、それはセンスに行きつきます」です。
come down to ～ で「～に行きつく」という意味の言い回しです。
boil down to ～ とも言えます。
taste は「味覚、味」という意味もありますが、ここではもっと広い意味で「センス、審美眼、風情、趣」という意味です。
例：She has very good taste in clothing.「彼女は服のセンスがとてもいい。」

It comes down to ～「それは～に行きつく」
trying to expose yourself to ～ で「あなた自身を～に晒すようにすること」です。
expose ～ to … は「～を…に晒す、暴露させる、触れさせる、経験させる」です。
何に触れさせるのかというと、
the best things (that) humans have done. で「人類が成してきた最高の物たち」です。
つまり伝統的な文化財や芸術作品などのことです。

And then ～「そしてその後」
try to bring those things in to what you’re doing. で「それらの物を～に取り入れる、あなたが今やっていることに」です。
bring ～ in で「～を取り入れる」という意味です。
bring ～ in to … で「～を…に取り入れる」となっています。
what you’re doing で「あなたが今やっていること」です。
つまり、ジョブズの場合はパソコン開発のことですね。

I mean, Picasso had a saying, he said: で「だって、ピカソが言ったことわざがあります、彼は～と言いました」
good artists copy, great artists steal. で「優れた芸術家は模倣し、偉大な芸術家は盗む」です。

こちらの記事によるとこの引用はジョブズの間違いで、実際ピカソが言ったこと以下だったようです。
“Lesser artists borrow; great artists steal”「劣った芸術家は借用し（真似をし）、偉大な芸術家は盗む」

それではまず文節に分けて日本語に訳し内容を理解して下さい。

でもその正しい方向が一体どちらかをどうやって知るんですか？

まあ、結局は、それはセンス、ということになりますね

It comes down to taste.
センスということになります

It comes down to
それは～に行きつきます
