But inside their brains,「しかし彼らの脳の内側では」です。
their は musicians を指しています。
there’s a party going on. で「パーティーが続いている」です。
go on で「続く、継続する」です。

How do we know this? で「どうやって私たちはこれを知るのか？」です。
つまり、なぜわかるのか？　です。

Well, in the last few decades, で「この数十年で」です。
few decades で「数十年」です。

neuroscientists have made enormous breakthroughs で「神経科学者たちは、大きなブレークスルーを成し遂げた」です。
neuro ニューロウは「神経の、神経学の」です。
make a breakthrough で「突破口を開く、局面を打開する」という意味のコロケーション。

何について突破口を開いたかというと、
in understanding ～ で「～を理解することにおいて」です。
何を理解するのかというと、
how our brains work で「我々の脳がどのように動くか、どのように機能するか」です。

by monitoring them in real time で「それらをモニタリングすることによって、リアルタイムに」です。
them は our brains を指しています。

with instruments like fMRI and PET scanners. で「～などの計測器を使って、fMRIやPETスキャナーなどの」です。
instrument は前回出てきた「楽器」という意味以外に「計器、道具、器具」という意味もあります。
like ～ は「～のような、～などの」で such as ～ と同義。

それではまず文節に分けて日本語に訳し内容を理解して下さい。
