で「パブでビールを3杯運んでいたとき、友達が後ろからやってきて、俺のズボンをずり下ろした。下着まで一緒に下がってしまった。大爆笑が起こった。数週間後、ガソリンスタンドでそいつが給油しているのを見かけた。俺はそっと背後に忍び寄り、やつのショーツを引き下ろした。……そいつじゃなかった。慌てて車に乗って走り去った。」という意味になります。

carrying 3 pints,「ビールを３パイント運んでいるとき」です。
3 pints は 3 pints (of beer) ですね。
pint はイギリスでは568ml、アメリカのUSパイントは473mlです。
my mate came up behind me 「友達が私の後ろから近づいてきた」です。
mate はイギリスでよく使われる呼びかけで「友達、仲間」という意味合いです。
and ～「そして～」
pulled my pants down.「私のパンツを引き下ろした」です。
pants はここでは下着ではなく「ズボン」を指していますね。

Undies came down too.「下着も一緒に下がってしまった。」です。
undies はトランクスやブリーフなどの「下着のパンツ」ですね。
pants や glasses と同様で、一枚でも複数形になるので注意しましょう。

Roar of laughter went up. で「笑いの轟きが起こった。」です。
roar は「ライオンなどの吠え声、怒号、わめき声」という意味の名詞。
roar of laughter なので「大爆笑の嵐」といった意味合いですね。
go up は「（現象などが）沸き上がる、起こる」です。

A few weeks later「二週間後」
(I) spotted him filling up at the petrol station. で「その彼がガソリンスタンドで給油しているところを見つけた。」です。
him はパンツを下した彼です。
fill up は「（ガソリンタンクを）満タンにする、車に給油する」です。
petrol station はイギリス英語で「ガソリンスタンド」です。
アメリカ英語では gas station となります。

I snuck behind him「私は彼の背後に忍び寄った」
snuck は sneak の過去形。
and ～「そして～」
pulled his shorts down.「彼の短パンを引き下ろした。」です。
shorts は「短パン」ですね。pants, undies, jeans などと同じく一枚でも複数形です。

It wasn’t him.「それは彼ではなかった。」
(I) Got in my car & drove off「私は車に乗って、走り去った」です。
get in the car で「車に乗る」という意味のコロケーションです。
自動車の場合は前置詞 in が使われるので注意しましょう。

それではまず文節に分けて日本語に訳し内容を理解して下さい。
