growth は grow グ[ロ]ウ「成長する」の名詞形です。

there was a great upsurge in the consumption of ～ で「～の消費の大幅な急増があった」という意味になります。
upsurge [ア]ップサージは「急増、急激な高まり」という意味の名詞です。
例：population upsurge「人口急増」
upsurge in ～ で「～における急増」という形でよく使われます。
surge サージだけでも「急上昇、急増」という意味になります。
例：surge in oil prices「原油価格の急騰」

consumption コン[サ]ンプションは「消費、消費高」という意味の名詞です。
動詞形は consume コン[シュ]ーム「消費する、摂取する」です。

the consumption of different kinds of meat and dairy products で「様々な種類の肉や乳製品の消費」という意味になります。
different kinds of ～ で「様々な、いろいろな種類の～」という意味になります。
different は「違った、異なった」という意味で有名ですが、「さまざまな、いろいろな」という意味も有ります。
例：different dog types「いろいろな犬種」

dairy [デ]アリは「乳製品の、牛乳の」という意味の形容詞です。
例：dairy farmer「酪農家」
