In the walls, floor and ceilings of ～ で「～の壁や床や天井の中に」です。
(of) squelching tunnels で「ビチャビチャしたトンネル（の）」です。
squelching は「ビチャビチャした、ぬかるんだ」という意味の形容詞。
動詞 squelch は音からできた言葉で「ピチャピチャ音を立てる、ビチャっと押しつぶす、黙らせる」という意味。
湿ったカエルを踏み潰すようなイメージですね。
deep beneath a County Tyrone hill で「タイロン州の丘の地下深くの」です。
deep beneath ～ で「～の下深くに」という意味のコロケーション。
county はアメリカでは「郡」ですが、イギリスでは「州」という意味になります。
County Tyrone で「タイロン州」です。

そんなトンネルの中に、

この文の主語は minerals ですが、倒置が起きて動詞 lie が先に来ています。

Such are ～ で「まさにそれが〜だ」という意味の言い回しです。
riches は複数形で「膨大な財産、富」という意味になります。

could be unearthed で「発掘できるかもしれない」
at Curraghinalt in rural Northern Ireland.「カラヒナルト（Curraghinalt）という北アイルランドの田舎町で」です。
the riches (that) developers claim could be の部分は、関係詞節が入れ子構造になった連鎖関係代名詞節になっています。
