If ～「もし～」
the rules of ancient Greece で「古代ギリシャの規則が」
were observed today,「今日も守られる（のなら）」です。
Greece で「ギリシャ」です。形容詞形は Greek「ギリシャの」となります。
observe は「～を観察する」でおなじみですが、ここでは「（規則や法律を）守る、順守する」という意味になります。
例：observe instructions「指示を守る」
drone and missile fire で「ドローンやミサイルの攻撃は」
over Ukraine「ウクライナの上空での」
would stop on Friday で「金曜日にはやむことになるだろう」です。
as ～「～するように」という慣習・習わしのニュアンスの接続詞。
guns fall silent in the Olympic tradition.「オリンピックの伝統の中で銃声が静まるように」です。
fall silent で「やむ、静かになる、黙り込む」という意味のコロケーション。

the United Nations は「国際連合（国連）」です。 the U.N. と略されます。
organizer は「主催者、とりまとめ役」という意味の名詞。
call for ～ で「～を求めて呼びかける」という意味の句動詞です。
a 7-week pause of all wars で「全ての戦争の7週間の停止」です。
pause で「停止」です。cease fire「停戦」とも言えますね。
worldwide「全世界で、世界中で」という意味の副詞です。
— as they do「彼らが（いつも）そうするように」
every time the Olympics take place. で「オリンピックが開催されるときは毎回」です。
the Olympics と、複数形になるので注意しましょう。
the Olympic Games（競技種目の集合）という意味合いです。
every time ～ はここでは、when ～ と同じように接続詞的に使われています。
