That some people, unable to go to school, were more educated and more intelligent than college professors. で「母は私に言った。常に、無学でいることに甘んじてはいけないが、文字が読めない人にも理解を示さないといけない。学校に行けないそのような人の中には、大学教授よりも教養があり知的な人もいるのだと。」という意味になります。 My mother said ～ で「母は～だと言った」です。 何と言ったのかというと、 I must always be intolerant of ignorance で「いつでも無知であることに我慢しないようにしなければならない」です。 intolerant of ～ で「～に我慢ならない、～に寛容でない」という意味になります。 intolerant で「寛容でない、耐えられない」という意味の形容詞です。 tolerant「寛大な」に、否定の接頭辞 in- が付いた形です。 例：intolerant of bad manners「無作法に我慢ならない」、intolerant to milk「牛乳アレルギーである」 ignorance は「無知、無学、無教養、知らないこと」という意味の名詞です。 形容詞形は ignorant で「無知な、無学な」 例：Ignorance is bliss.「知らぬが仏」、I'm very ignorant about music.「音楽については全く知識がありません。」 but understanding of illiteracy で「でも無学の人も理解する」です。 understand of ～ で「～について理解する」です。 illiteracy は「文字が読めないこと、文字が読めない人、無学」です。 literacy リテラシー「読み書きができること」に、否定の接頭辞 il- が付いた形です。 例：adult illiteracy rate「大人の非識字率」、political illiteracy「政治的な無知」 That some people, unable to go to school, で「学校にいけないそのような人の中には」です。 that people の that「そのような」とは、illiteracy「読み書きができない人」のことです。 some people は「中には～なような人もいる」と訳すとしっくりきます。 more educated and more intelligent than college professors で「大学教授よりも教養があり知的（な人もいる）」です。 educated で「教養のある、賢い」です。 例：educated consumer「賢い消費者」 無学のままでいることに甘んじてはいけないが、無学な人にもすごい人はいるので、蔑ろにしてはいけないよ、ということですね。
