demonstrate ～ で「～を実演する、実地で証明する」です。
its ability の its は記事中で既に登場した中国初のAI、DeepSeek を指しています。
どんな能力（ability）かというと、
(ability) to innovate around American export restrictions, で「アメリカの輸出規制を回避してイノベーションを起こす（能力）」です。
innovate は「革新する、イノベーションを起こす」です。
ここでの around ～ は「～をうまく切り抜けて、～を避けて、迂回して」という意味合いです。
例：design around the limitation 「制約をうまく回避して設計する」
export restrictions で「輸出規制」です。
アメリカが、最先端の半導体（NVIDIA 製品）を中国に輸出しないようにしていたことを指しています。

piles of ～ で「山のような～、豊富な～、膨大な～」という意味のコロケーション。
cutting-edge semiconductors で「最新の半導体」です。
related equipment で「関連する設備」です。
equipment で「設備、装置、機材」という意味合いです。
is as important as previously thought で「これまで考えられてきたほど重要（かどうか）」です。
as ～ as … で「…と同じくらい～だ」という意味の言い回し。
when it comes to training AI models. で「AIモデルの訓練に関して」です。
