で「人は、モデル業は頭を使わないものだと思っている。ただそこに立ってポーズするだけって。でも必ずしもそうでもない。私はたくさん人の意見を取り入れるのが好き。わたしは、どう服を着こなせばいいか理解している。立って撮られたほうがいいか、座って撮られたほうがいいか。」という意味になります。

People think modeling’s mindless, で「人々は～と思っている、モデル業は頭を使わない仕事と」です。
modeling is mindless で「モデル業は何も考えないでもできるもの」です。
mindless で「頭を使わなくてもいい」という意味の形容詞です。
例：mindless game「頭を使わないゲーム、反射的な反応だけで行うゲーム」
mind は「心、精神」という意味以外にも「頭脳、知性」という意味もあります。

that you just stand there and pose, で「～という、ただそこに立ってポーズをとる」です。
that は mindless (job) を説明する that節です。
you はこの場合、総称人称で「人、誰か」という意味になります。

but it doesn’t have to be that way. で「しかし、それは必ずしもそういうわけでもない」です。
not have to be ～ で「必ずしも～ではない」となります。
it doesn’t have to be that way を、まとめて覚えておくと便利です。
That’s not necessarily so. とも言えます。

I like to have a lot of input. で「私は～が好きだ、たくさんの意見を取り入れること」です。
have input で「意見を取り入れる」となります。
この場合の input は「人の意見、アドバイス、アイデアの提供」という意味です。
例：have input from various viewpoints「様々な意見を聴く」

I know how to wear a dress, で「私はわかっている、ドレスの着こなし方を」です。

whether it should be ～ で「それが～されるべきかどうか」
whether ～ or … で「～か…かどうか」ですね。

be shot で「撮影される」です。
shot は shoot「撮影する」の過去分詞形です。

with me standing or sitting. で「私が立った状態か、または座った状態か」です。
with ～ …ing で「～が…している状態で」という意味になります。
例：Do you have a problem with me being here?「私がここにいて何か問題でも？」

それではまず文節に分けて日本語に訳し内容を理解して下さい。
