で「20代前半の日々の仕事の中で、私は自分がどれだけ幸運だったかを思い知らされました。民主的に選ばれた政府があり、そこでは弁護士が付くことや、公的な裁判がすべての人の権利である国に生まれたことがです。」という意味になります。

Every day of my working week in my early 20s で「毎週の労働の毎日で、私の20代での」です。
I was reminded ～ で「私は～思い出さされた、気付かされた」です。
how incredibly fortunate I was, で「自分がどれだけ幸運だったかを」です。
incredibly fortunate で「信じられないくらい幸運な」です。
fortunate [フォ]ーチュニットゥで「幸運な」
to live in a country with ～ で「～を持った国で暮らしていること」です。
(a country) with a democratically elected government, で「民主的に選ばれた政府を持った（国）」です。
democratically elected で「民主的な選挙で選ばれた」です。
, where ～ で「（その国では）」
legal representation and a public trial で「弁護士が付くことや公的な裁判」です。
representation は「代理」です。
つまりここでは法的な代理人（国選弁護士）がつくことです。
were the rights of everyone. で「すべての人の権利である」です。
