で「日本は紛れもなくグルメにとっての楽園、と言うことは、全く控えめ過ぎる表現です。季節の料理から地域ごとの特産品まで、日本にはそこに住む人の数と同じくらい食べ物のバリエーションがあります。」という意味になります。

To say that Japan is undeniably a food lover’s paradise「日本は紛れもなくグルメにとっての楽園と言うこと」までが主語になります。
To say that ～ で「～と言うこと」です。
Japan is undeniably a food lover’s paradise で「日本は否定する余地のないほどグルメの楽園である」です。
undeniably で「紛れもなく、否定する余地のないほど」という意味の副詞です。
語幹は deny ディナイ「否定する」で、un- と、-able がくっついた形です。
形容詞形は、undeniable アンディナイアボォ「紛れもない、動かぬ、明白な」です。
例：undeniable truth「動かしがたい事実」

would be a gross understatement で「～は全く控えめ過ぎる表現であろう」です。
understatement は「控えめな表現、過小評価」という意味の名詞です。
例：with a certain understatement「やや控えめな表現で」
gross はこの場合「まったくの、甚だしい」という意味の形容詞です。
例：gross injustice「甚だしい不正」、gross lie「真っ赤なウソ、全くの嘘」

From seasonal dishes to prefectural specialties で「季節の料理から地域ごとの特産品まで」です。
seasonal dish で「季節の料理」となります。
dish は皿という意味以外にも「料理」という意味があります。
prefectural は「県の、地域の」です。
名詞形は、prefecture プ[リ]ーフェクチャー「県」です。
specialty は「特産品、専門分野、おはこ、得意なこと」です。

there are almost as many variations on Japanese food as there are people in Japan で「日本の食べ物には、日本に住む人の数ほどたくさんのバラエティーがある。」です。
as many ～ as … の形で「…と同じくらい～が多い」です。
many variations on Japanese food で「日本の食べ物のたくさんのバリエーション」です。
as there are people in Japan で「日本に人々がいるのと同じくらい」という意味になります。
