Unagi is expensive to produce and costly to eat. Most eel stocks are also endangered and unsustainable. In spite of all this, the Japanese passion for the slippery river fish continues unabated and unagi producers must scramble every year to secure the river fish in time for summer.
で「ウナギは育てるのにも高くつくし食べるのにもお金がかかる。またほとんどのウナギ種は危機に瀕しており持続不可能だ。これだけのことがあるにもかかわらず、日本人のこのヌルヌルした川魚への情熱は衰えることを知らないので、ウナギ生産者は毎年夏に間に合うようにこの魚を確保するために奔走しなければならない。」という意味になります。

Unagi is expensive to produce and costly to eat. で「ウナギは育てるのにも高くつくし食べるのにもお金がかかる。」です。
produce は「生産する、作物を作る」と言う意味です。
映画や音楽などを製作するという意味でおなじみですが、
農作物や食材を生産するという意味でも使われます。
例：produce rice「米を生産する」
producer で「生産者」となります。
expensive と costly はほぼおなじみで「高価である、高い、お金がかかる」と言う意味です。

Most eel stocks are also endangered and unsustainable. で「ほとんどのウナギの種は危機に瀕して持続不可能である」です。
eel は「ウナギ」と言う意味の名詞ですね。
eel stocks で「ウナギ資源」となります。
stock は「蓄え、備蓄」と言う意味もありますが、この場合は「（生き物などの）資源、種、種族」と言う意味になります。
例：restore fish stocks「魚種資源を回復させる」
endanger エンデインジャーは「～を危うくさせる」です。
endangered で形容詞的に「危機に瀕している」となります。
unsustainable は「持続不可能な、いつかついえてしまう」です。
un-（否定の接頭語）＋ sustainable「持続可能な、長続きできる」です。
例：sustainable energy「持続可能なエネルギー」

In spite of all this　で前出を受けて「これだけの理由があるにもかかわらず」と言う意味の慣用句です。

the Japanese passion for the slippery river fish で「このヌルヌルの川魚への日本人の情熱」です。
the slippery river fish は Unagi のことですね。

continues unabated で「衰えないままだ」です。
unabated は「衰えない、弱まらない」と言う意味の形容詞です。
un-（否定）＋ abate「弱める、低める、緩和する」です。
例：abate someone’s anger「人の怒りを鎮める」

and unagi producers must scramble every year to secure the river fish in time for summer. で「なのでウナギ生産者は毎年夏に間に合うようにこの魚を確保するために奔走しなければならない。」です。
unagi producers で「ウナギ生産者」ですね。
must scramble every year で「毎年、奔走しなければならない」です。
scramble は「先を競って急ぐ」と言う意味の動詞です。

何をするのに先を競うのかというと、
scramble to secure the river fish in time for summer で「この川魚を夏に間に合うように確保するために先を競って駆け回る」です。
secure ～ で「～を確保する」と言う意味の動詞です。
例：secure a meeting room「会議室を確保する」
in time for summer で「夏に間に合うように」と言う意味になります。
in time for ～ で「～に間に合うように」と言う意味の言い回しです。

それではまず文節に分けて日本語に訳し内容を理解して下さい。

ウナギは生産するにもお金がかかるし

and costly to eat.
食べるのにも高価だ

Most eel stocks are
ほとんどのウナギ種は

危機に瀕しているし持続不可能である
