In a perfect dream, things would be set exactly the way you would want them. But I think it’s more interesting that in real life, things aren’t exactly the way you planned.
で「完璧な夢の中では、そうであって欲しい通りに物事は用意されいる。でも現実の世界では、物事は計画した通りには行かない。私はその方が面白いと思う。」という意味になります。

In a perfect dream, で「完璧な夢の中では」です。

things would be set exactly the way you would want them で「物事はセットされているだろう、まさに～どおりに、あなたが物事がそうであって欲しいとおりに」
この場合の things とは「物事、事態、様相」と言った意味合いです。
would be set で「セットされているだろう」です。
be set で「セットされている、設定されている、用意されている」です。
exactly the way ～ で「～どおりに、ぴったりと～のように」です。
you would want them で「あなたが、それらに望む（ように）」です。
them は things を指しています。

But I think it’s more interesting that ～ で「しかし、私は～だと思う、～である方がもっと面白いと」です。

どんな風なのがもっと面白いのか、
(that) in real life, things aren’t exactly the way you planned. で「現実世界では、物事はあなたが計画したとおりではない（こと）」です。
not exactly the way ～ で「～どおりではない、～とぴったり同じではない」となります。

人生は予想通りにいかないからこそ面白いのだということですね。
