イギリス出身の音楽家、ブライアン・イーノ氏の言葉です。

My kind of composing is more like the work of a gardener. The gardener takes his seeds and scatters them, knowing what he is planting but not quite what will grow where and when – and he won’t necessarily be able to reproduce it again afterwards either.

で「私の作曲の仕事はどちらかというと庭師の仕事に似ている。庭師は、種を手に入れてそれらを撒く。何を植えているかは知っているが、いつどこで、どう育つかはよくわかっていない。また、必ずしもそれを後から再現できるわけでもない。」という意味になります。

My kind of composing is ～ で「私の作曲（のような）行為」です。
my composing に kind of をつけて「～的な、ある種の～」という意味合いになります。
compose コン[ポ]ウズは「作曲する、曲作りをする、構成する」という意味の動詞です。
例：composer「作曲家」

is more like the work of a gardener で「～は庭師の仕事にむしろ近い」です。
like ～ で「～のようなものだ、～に似ている」です。
more like ～ で「むしろ～に近い、どちらかというと～のようなものだ」という意味合いです。
gardener は「庭師、園芸家」です。

The gardener takes his seeds and scatters them で「庭師は自分の種を手に入れ、それらを撒く」です。
take one’s seeds で「自分の種を手に入れる」です。
take には「（能動的に）取る、取ってくる、買ってくる、選び取る」という意味があります。
scatters them で「それらの種を撒く」です。
scatter は「～を撒く、まき散らす」という意味の動詞です。
例：scatter roasted beans「炒った豆をまく」

knowing what he is planting で「自分が何を植え付けたかは分かっている（が）」です。
knowing ～ 以降は、分詞構文で as he kowns ～ と同じ意味です。

but not quite what will grow where and when で「でも、いつどこで何が育つかは、あまりよくわかっていない」です。
not quite で「完全に～ではない、それほど～でない」です。
省略を補完すると not quite (know) what ～ となります。
what will grow で「何が育つか」です。

and he won’t necessarily be able to ～ で「また、必ずしも～できるわけではない」です。
not necessarily で「必ずしも～ではない」です。
何ができないのかというと、
to reproduce it again afterwards で「それを再現することが、後から」です。
reproduce は「～を再現する、～を繁殖する」です。
afterwards は「のちに、あとから、後になって」という意味です。

either は 否定文で「また（～でもない）」という意味合いです。

それではまず文節に分けて日本語に訳し内容を理解して下さい。
