で「娘の保護者会で、生物の先生が『すばらしく伸びていますよ、この子は本当にすごい子ですね』と言った。そこで私は『それなら地学にいるべきじゃないですかね？』と言った。すると二人とも、ただポカンとこちらを見るだけ。そこへ通りかかった校長が『今夜のオヤジギャグ大賞だね』と言ってくれた。白状すると、私はそれがものすごく誇らしかった。」という意味になります。

Daughter’s parents night, で「娘の保護者面談の夕べで」です。
parents evening とも言います。
parents night は日本でいう授業参観のようなもので、保護者が学校に出向き、先生と子供と３者懇談をするというものです。

with biology teacher で「生物の先生と一緒になって／面談の席で」
“excellent progress, she’s a rock star”. で「素晴らしい向上です、彼女は抜群ですね。」です。
a rock star はここでは「ロックスターのように素晴らしい活躍だ」という意味ですね。
I said「私は言った」
“surely she should be in geology then?”.「それじゃ、きっと彼女は地学に進むべきですよね？」です。
surely は「きっと、確かに」という意味の副詞。
Surely ～ then? は「それだったら当然～ですよね？」と、少しおどけた確信を含んだ聞き方です。
geology は「地質学、地学」です。
rock star の rock「岩」とかけているわけですね。

Both just stared at me. で「二人ともただ私とじっと見つめていた。」です。
親父ギャグに対するよくある反応ですね。

headteacher で「校長」です。アメリカでは principal がよく使われます。
“Gold star for dad joke of the night”.「今夜の親父ギャグ大賞だね。」と。
dad joke で「親父ギャグ」です。

Confession is,「私の告白は～」
I’m proud as punch with that.「そのことがすごく誇らしかった。ということだ」です。
as proud as punch は決まり文句で「非常に誇らしく思う、大得意で」という意味。
この表現は、イギリスの伝統的な人形劇『パンチとジュディ』の主人公パンチが、悪事を働いた後に「やったぜ！」と自慢げに喜ぶ様子から来ています。
「鼻高々、してやったり」という、少し茶目っ気のある誇らしさが含まれます。

それはまず文節に分けて日本語に訳し内容を理解して下さい。
