で「実際にそれを書いたとき、私はその反響に驚いた。文字どおり何千通ものメールが届いたのだ。世界中の、実にさまざまな人たちからで、その職業も本当にさまざまだった。看護師の人もいれば、銀行員、画家、エンジニア、そしてそれはもう本当にたくさんの博士課程の学生たちもいた。」という意味になります。

When I did,「私がそれをしたとき」です。
前回の文をうけて「ブログにその記事を書いた」こと、を指しています。
I was amazed by the response.「私はその反響にびっくりした」です。
be amazed by ～ で「～に驚愕する、驚く」という意味の言い回し。
the response は、そのブログ記事への反響ですね。
Literally「文字通り」
thousands of emails came in,「数千ものeメールが舞い込んだ」です。
from all different kinds of people「ありとあらゆる種類の人々から」
from all over the world,「全世界から」
, doing all different kinds of things. で「ありとあらゆることをやっている（人々から）」です。
ここでの do は「何をしているか」ですが、つまり「職業」を意味しています。
例：What do you do?「お仕事は何ですか？」
These are people who ～「これらは～する人々です」
(who) were nurses, bankers, painters, engineers「看護師、銀行員、画家、エンジニア（の人々）」
and lots and lots of PhD students.「また、博士課程の学生も非常にたくさんいました」です。
PhD は、最高学位の「博士号」です。
ラテン語の Philosophiae Doctor の略形。
「学士号」が bachelor’s degree
「修士号」が master’s degree
となります。
それではまず文節に分けて日本語に訳し内容を理解して下さい。
