就職活動もAIを意識する時代なんですね。

今回の文、主語が長いですね。
About 67.5 percent of 1,258 university and graduate students slated to graduate in March 2019 までが主語です。
「2019年3月に卒業見込みの1,258人の大学・大学院生のおおよそ67.5%」です。
university and graduate students で「大学生と大学院生」となります。
university students で「大学生」
graduate students で「大学院生」となります。
graduate は「卒業する」という意味もありますが、卒業後の学校という意味で「大学院」という意味があります。
graduate school や grad school などと言います。
slated to graduate in March 2019 で「2019年3月に卒業予定の」となります。
slated to ～ で「～することが予定されている」という意味になります。
例：The school is slated to open ～ で「その学校は～に開校する予定だ」
slate スレイトは名詞では「粘土板」という意味です。瓦のような石板です。
昔はそこに文字を書いていました。計画表・候補者名簿などを書いたりしていた名残で「計画する、予定を立てる、候補に立てる」という意味になりました。

they don’t want AI to assess their job qualifications during interviews. で「彼らは面接のときにAIに自分たちの仕事の能力を査定されたくない」です。
want ～ to … で「～に…してほしい」です。
don’t want AI to assess ～ なので「AI に査定されたくない」です。
assess は「査定する」です。
名詞形は、assessment アセスメント「評価」です。
何を査定されたくないのかというと、
their job qualifications「自分たちの仕事の能力」です。
qualification は「資質、能力」です。
動詞形は、qualify で「資格を与える、適任とする」です。
例：qualified assessor「有資格査定人」
interview はこの場合「就職の面接」のことです。
