で「賞を取ろうと思って物理学の研究に取り組む人はいない。まだ誰も知らないことを発見する喜びがあるからである。」という意味になります。

No one が主語で「誰も（～しない）」という意味になります。

undertakes research in physics で「物理学の研究に取り組む」という意味になります。
undertake アンダー[テ]イクは「（義務・責任・仕事・地位などを）～を請け負う、負う、引き受ける、着手する」という意味の動詞です。
例：undertake a daring venture「勇敢な冒険に乗り出す」、undertake a new enterprise「新しい事業を始める」
何かの役割を引き受けるという意味合いです。
今回は undertake research で「研究に着手する、研究に取り組む」という意味の言い回しです。
research in physics は「物理学の研究」です。
physics は「物理学」ですね。
phys. と略したりもします。
例：theoretical physics で「理論物理学」

with the intention of winning a prize. で「賞を受賞する意図で、賞をとる目的で」です。
with the intention of ～ で「～の意図で、～する目的で」という意味の言い回しです。
intention は「意図、つもり、腹づもり」という意味の名詞（noun）です。
win a prize で「賞を獲る、受賞する」という意味のイディオムです。
例：win 1st prize「一等賞を取る」

It is the joy of discovering ～ で「（その目的は）発見する喜びだ」となります。
It は「研究の目的」ですね。

何を発見するのかというと、
something no one knew before で「誰も今まで知らなかったこと」です。
(that) no one knew で「誰も知らなかった」が、直前の something「何か」を修飾する関係代名詞節となっています。
例：something that no one else has done before「今までに誰もしたことのないこと」
