で「近年、コケに熱中する人の数が日本で増えている。様々な違った種類のコケを見つけたい人たち向けのハイキングツアーや、自宅観賞用のテラリウムに入った植物を売る店など（が登場してきている）。」という意味になります。

In recent years, moss enthusiasts have increased in number in Japan, で「近年、コケ愛好家の数が日本で増えてきている」となります。
In recent years で「近年」という意味の言い回しです。
moss enthusiasts で「コケの愛好家」です。
moss は「コケ、苔」です。モスグリーンの moss ですね。
他にも学術的に bryophyte ブ[ラ]イアファイトゥ「コケ植物」といったりもします。
bryology で「蘚苔学」となります。
liverwort リヴァウォートゥ「苔類」
lichen ライケン「地衣類」
という言い方もあります。
enthusiast は「熱心な人、愛好家」です。
動詞形は enthuse エン[シュ]ーズ「熱中する」です。
increase in number で「数が増える」という意味の言い回しです。

with ～ 以降は「～などと一緒に、～などがある状況で」という付帯的な状況を言い表します。

tour hikes catering to those eager to spot different varieties で「様々な違った種類のコケを見つけたい人たち向けのハイキングツアー」です。
tour hikes で「ハイキングツアー、山歩きツアー」ですね。
catering to ～ で「～に向けての、～の要求を満たす」という意味の言い回しです。
例：magazine catering to teenage girls「10代女性向けの雑誌」
誰に向けてのかというと、
those eager to ～ で「～したくてたまらない人々」です。
those は「（それらの）人々」という意味です。
eager to spot different varieties で「いろいろな種類の苔を見つけるのに熱心な」です。
eager は「～したくてたまらない、熱心な、したがる」です。
spot はこの場合「発見する」という意味の動詞（verb）です。
different varieties で「いろいろ違った種類」です。

and shops selling the plants in terrariums to display in homes. で「そして自宅観賞用のテラリウムに入った植物を売る店」です。
the plants in terrariums で「テラリウムに入った植物」です。
terrarium テ・[レ]ァ・リ・ゥム は「テラリウム」のことです。
aquariumをヒントに earth のラテン語 terra- から作られた言葉だそうです。
