で「この人たちは、iPhoneが初めて出た時、それを買うために6時間並ぶ人たちです。翌週には店頭の棚から買うことができるのに。」という意味になります。

These are the people who ～　で「これらは～な人たちです」という意味にの言い回しですね。

どんな人たちなのかというと、
(the people who) stood in line for six hours to buy an iPhone when they first came out で「iPhoneが初めて出た時、それを買うために6時間並ぶ（人たち）」です。
stood は stand の過去形です。
stand in line で「列に並ぶ」となります。
when they first came out で「初めてそれらが登場したとき」です。
come out は「現れる、外で出てくる、世に出る、発売される」です。

when you could have bought one off the shelf the next week. で「翌週には店頭の棚から買うことができるというのに」という意味になります。
この場合の when は【条件】を表して「～なのに、～であるのに」という意味になります。
例：when you have me「私というものがありながら、私がいるのに」
when someone could have ～ で「～できるというのに、～できたものを」という意味の言い回しになります。
buy ～ off the shelf で「棚から買う、在庫品を買う、即納品を買う」です。
例：off-the-shelf item「在庫品、即納品」

それではまず文節に分けて日本語に訳し内容を理解して下さい。
