Today, I have the stomach flu. I’ve thrown up at least 15 times but can’t call off because I’m the only one in the office until January 1st. Everyone else put in for vacation time. FML
で「今日、私はウイルス性の胃腸炎にかかっている。少なくとも15回は吐いた。でも仕事を休めない。なぜなら1月1日までオフィスには私一人だから。他のみんなは休暇を願い出てしまった。F*ck my life!」という意味になります。

I have the stomach flu. で「私はウイルス性の胃腸炎にかかっている」です。
flu で「インフルエンザ」という意味になります。
stomach flu なので「胃のインフルエンザ、ウイルス性の胃腸炎」といういことです。

I’ve thrown up で「私は吐いてしまった」です。
at least 15 times「少なくとも15回は」です。
throw up は「吐く、嘔吐する」という意味の句動詞（phrasal verb）です。
動詞一語では vomit とも言えます。

but can’t call off で「しかし（私は）仕事を途中でやめられない、取りやめられない」です。
call off は「中止する、取りやめる」です。
cancel「キャンセルする、取りやめる」とも言えます。
例：call off one’s date 「デートを取りやめる」

なぜかというと、
because I’m the only one in the office until January 1st. で「1月1日まで私がオフィスにたった一人だから」です。
the only one in the office で「オフィスにいるたった一人の人」です。
until January 1st で「1月1日まで」となります。
日本では「正月三が日」が休みというところが多いですが、海外では日本ほどお正月を祝いません。
基本的にクリスマスから年末にかけて休暇を取り、1月2日から通常営業という場合が多いようです。

Everyone else put in for vacation time で「他のみんなは休暇願を出した」です。
put in for ～で「～願いを出す、～に申し込む」です。
例：put in for a raise「昇給を願い出る」、She put in for a transfer to another section.「彼女は他部署に転任を願い出た。」
ここの put は過去形となります。
put は過去・過去分詞とも同じ形をとる動詞になります。

それではまず文節に分けて日本語に訳し内容を理解して下さい。

私はウイルス性胃炎にかかっている

I’ve thrown up
私は吐いた

at least 15 times
少なくとも15回は

but can’t call off
でも仕事をキャンセルできない

because I’m the only one in the office
なぜなら会社には私一人だから
