I was quite privileged in that I didn’t have to release an album until it was ready. A lot of artists have to release every couple of years to maintain credibility and to finance their art, but I had the space and time to make a record I hope will last.
で「私は、用意ができるまでアルバムを出さなくても大丈夫という特権に恵まれていた。多くのアーティストは２～３年毎にアルバムをリリースしなくてはいけない。それで信頼を得て作品の資金を得るために。でも私はレコードを作るための空間と時間を持っていた。私はそれが今後も続けばいいなと思っている。」という意味になります。

I was quite privileged in ～ で「わたしはかなり～に特権を得ていた」となります。
privilege プリヴィリッジは名詞では「特権、恩恵」という意味です。
動詞では「特権を与える」となります。
例：feel privileged「恵まれていると感じる」

in that ～ で「～という点で」という意味の言い回しです。

どんな点で恵まれているかというと、
(that) I didn’t have to release an album until it was ready で「しっかり用意できるまでアルバムをリリースしなくてもいい（という）」です。

A lot of artists have to release every couple of years to maintain credibility and to finance their art で「多くのアーティストは２～３年毎にアルバムをリリースしなくてはいけない、信用を保って彼らの作品の資金を調達するために」です。
have to release every couple of years で「２～３年毎に（アルバムを）リリースしなければならない」です。
couple of years で「２～３年」となります。
to maintain credibility で「信用を保つために」です。
to finance their art で「彼らの作品の資金を得るため」です。
finance は「～の資金を調達する」という意味の動詞です。
例：finance a trip abroad「海外旅行の資金を調達する」

but I had the space and time to make a record I hope will last. で「でも私はレコードを作るための空間と時間の余裕を持っていた」です。
そして、(that) I hope will last 「（それが）今後も続けばいいと願っている」です。
