で「前からあったものを変え、音楽を別の方向へ連れて行ってくれる音楽的知性を持っている人、そんな人以上にすごいギタリストは私には思いつけない。それが私にとってのギターヒーローだ。」という意味になります。

I can’t think of a greater guitar icon than ～ で「私には思いつけない、～よりも偉大なギターの象徴的人物を」です。
「～以上はいない」ですので「～が最も偉大だ」ということですね。
意訳すると「私にとって～が最も偉大なギタリストだ」です。
think of ～ で「～を思いつく」という意味の言い回しです。
can’t think of ～ なので「～を思いつけない」です。
a guitar icon は「ギターの象徴的人物」です。
icon アイコンは「象徴、偶像」という意味の名詞です。
そこから「象徴的な人物」という意味になります。「ギターと言ったらこの人だ」というような人物ですね。
