で「新年の幸福や収穫を願って参拝客や式典でいっぱいの、このようなお祭りは時に火を伴い、また雪に関するものも多い。日本の現代の雪まつりにはだいたい、たくさんの彫刻や滑り台などのアトラクションが伴う。」という意味になります。

Filled with prayers and rituals で「祈る人や式典でいっぱいになって」という意味です。
prayer プレァーは「祈り、祈りの言葉」という意味もありますが、
この場合は「祈る人、参拝客」という意味合いです。
ritual [リ]チュァォは「式典、儀式」という意味の名詞です。
例：ritual for rain「雨乞いの儀式」

for good fortune and harvest in the year ahead, で「幸運と収穫のために、目の前の年の」です。
(prayers and rituals) for good fortune and harvest で「幸運と収穫を願っての（参拝客と式典）」です。
in the year ahead で「目の前のその年に」ですのでいわゆる「新年」となります。
ahead は「目の前の、前途にある」という意味です。
例：road ahead「前方の道、前途、行く手に広がる道のり」

these festivals sometimes involve fire で「これらのお祭りは時に火を伴う」です。
involve は「～を含む、～を伴う」という意味の動詞です。
例：involve a lot of paperwork「文書業務を多く伴う」
and they often involve snow で「雪もよく伴う」です。

Japan’s modern-day snow festivals で「日本の現代の雪まつり」です。

usually include a plethora of sculptures, slides and other attractions. で「大抵はいつも、たくさんの彫刻や、滑り台やその他のアトラクションを伴う」です。
a plethora of ～ で「豊富な～、ふんだんな～」という意味の言い回しです。
例：plethora of information「情報過多」
sculpture は「彫刻」ですね。雪まつりの氷の彫刻のことです。
slide は「滑り台」です。ちなみに「ぶらんこ」は swing となります。
