conregation カングリ[ゲ]イションは「教会などの集まり、集会」という意味の名詞です。
動詞形は congregate [カ]ングリゲイトゥで「集まる、集合する」です。
例：congregate at someone’s house「人の家に集まる」

and you could feel this love in the sermons that he gave every week で「そしてあなたは感じられるでしょう、この愛を、彼が毎週行った説教の中に」です。
you could feel this love で「あなたはこの愛を感じ取れるでしょう」です。
this love とは「祖父が教会の集まりが好きだった」ことです。
sermon [サ]ーマンで「教会での説教」です。
牧師さんやラビから話される「ためになるお話」のことです。
the sermons (that) he gave every week で「彼が毎週与えた説教」です。
give a sermon で「説教をする」という意味になります。
give a speech「スピーチをする」と同じ用法ですね。

for the 62 years that he was a rabbi で「その62年の間に、彼がラビだった（62年）」です。

He would take the fruits of each week’s reading で「彼は～したものだった、毎週の読書からの成果を取ってきて」です。
would はこの場合は短期的な習慣・反復行動を表して「昔は～したものだ」という意味です。
fruits of reading で「読書の成果、読書から得たもの」です。
fruit は「果物」という意味以外に「成果、収穫、得たもの」という意味でもよく使われます。

and he would weave these intricate tapestries で「そして彼は～したものだった、これらの入り組んだ織物を織り出した」です。
weave tapestries「タペストリーを織る」はこの場合は比喩的（figurative）表現で、読書の知見を説教として織り上げたという意味です。
intricate は「入り組んだ、込み入った、複雑な」です。
例：intricate labyrinth「入り組んだ迷路」

どんなタペストリーかというと、
tapestries of ancient and humanist thought で「古来からの人間的な思想のタペストリー」です。
tapestries of thought「思想のタペストリー（織物）」とは、「祖父の説教」のことです。
ancient で「古来の、古い、太古の」です。
humanist は「人道的な、人間的な、人文的な」という意味の形容詞です。
例：humanist view「人道主義的な考え」

それではまず文節に分けて日本語に訳し内容を理解して下さい。
