For me, winning isn’t something that happens suddenly on the field when the whistle blows and the crowds roar. Winning is something that builds physically and mentally every day that you train and every night that you dream.
で「私にとって、勝利とは、笛が鳴り観客が歓声を上げる時、球場でいきなり起こるものではない。勝利とは、肉体的にも精神的にも、トレーニングする毎日と、夢を見る毎晩を形づくるものだ。」という意味になります。

winning isn’t something that ～ で「勝利は～ではない、～する何か」です。
is something that ～ で「～する何かである、～みたいなもの」という言い回しです。
(something that) happens suddenly on the field で「フィールドで突然起こる（何か）」です。
field はこの場合は「（アメフトの）試合場、グラウンド」という意味ですね。

when the whistle blows and the crowds roar. で「笛が鳴り、群衆が吠える時」です。
the whistle blows で「笛が鳴る」です。試合終了の笛のことだと分かります。
the crowds は「観客たち」です。
crowd で「群衆」です。
crowds と複数形で、群衆のグループが複数いるというイメージになります。
例：huge crowds of fans「膨大な数のファンたち」
roar ロアーで「吠える、大声を上げる」という意味の動詞です。
ライオンが吼える、うなる感じで、大音量で低い音が鳴り響くイメージです。
例：roar of a gun「鳴り響く銃声」

Winning is something that ～ で「勝利は～なものだ」です。

(something that) builds ～ で「～を形づくる（もの）」です。
physically and mentally で「肉体的にも精神的にも」

何を形づくるのかというと、
every day that you train and every night that you dream. で「トレーニングする毎日と、夢を見る毎晩を」です。

勝利（winning）がトレーニングの日々を築くというのは、ちょっと逆説的ですが、
要するに「毎日のトレーニング」「毎晩勝利を夢見ること」が、結果的に勝利につながっている、という事ですね。

それではまず文節に分けて日本語に訳し内容を理解して下さい。
