で「私たちは時代の只中に生きている。地球上で自殺行為のようなことをして、愚かな人々のように、全ての天然の資源を使い果たそうとしている時代の只中に。それこそが私がジャズについてよりも心配していることだ。」という意味になります。

I think (that) ～ で「私は～だと思う」です。

we are in the midst of this period (where ～) で「私たちは～のなかにいる、（～な）この時代の真っただ中に」です。
in the midst of ～ で「～の真っただ中に」という意味の言い回しです。
in the middle of ～ とも言えます。
this period where ～ で「～なこの時代」です。
「時期、時代」などの場合は、関係副詞 where が使われることがあります。「その時代の中で」という意味合いです。

その時代の中で
we are committing this suicide on the planet で「我々はまるで自殺行為のようなことをしている、地球上で」です。
commit suicide で「自殺する」という意味のコロケーションです。
this はこの場合は「ほらあの～的な、みたいな」という意味合いです。
例：I have this strange feeling.「なんかこう変な気持ち」

and everybody is just using up all of our natural resources で「そして、みんな、まさに～を使い果たそうとしている、全ての天然資源を」です。
use up ～ で「～を使い尽くす」です。
natural resources で「天然資源」です。石油やガスなどのことですね。
対義語は alternative resources「代替資源（水力、太陽光、風力など）」です。
like a bunch of insane people で「たくさんの狂った人々のように」です。

That’s what I worry about more than I worry about jazz. で「それこそが私が～よりも心配していることだ、ジャズについて心配しているよりも」です。
