As more and more people are diagnosed with COVID-19, で「ますます多くの人がCOVID-19と診断される中」です。
as ～ は「～のなかで、～の状況で」という意味の接続詞となります。
be diagnosed with ～ で「～と診断される」という意味の言い回しです。
例：a patient who was diagnosed with cancer「がんと診断された患者」

the question of how long immunity to SARS-CoV-2, the virus that causes the illness, lasts, までが主語となります。
「SARS-CoV-2（その感染症の元となるウイルス）への免疫はどれくらいの期間有効なのかという問題」です。
question は「問題、疑問、質問」です。
how long ～ lasts で「～がどれくらい存続するか」という意味です。
last はここでは動詞で「続く、存続する、もつ」です。
immunity to SARS-CoV-2 で「SARS-CoV-2への免疫」です。
immunity イ[ミュ]ーニティは「免疫」という意味の名詞です。
同義語では antibody [アー]ンティバディ「抗体」などがあります。
例：immunity to cancer「がんに対する免疫」、immune system「免疫システム」
the virus (that) causes the illness, は SARS-CoV-2 を挿入句的に言い換えて「その疾患の原因となるウイルス」です。
COVID-19 が病名で、SARS-CoV-2 がウイルスの名前という事になります。

is increasingly important. で「～がますます重要である」です。
increasingly は「ますます、どんどん」という意味の副詞です。
動詞形の increase は「増える、増加する」です。

Understanding that would help patients know whether ～ で「それを理解することは、患者が～かどうかを知る助けになるだろう」です。
Understanding that の that は「それ」という意味で「それを理解すること」となります。
help patients know ～ で「患者が～を知るのを助ける」です。
help ～ do 動詞原型（bare infinitive）で「～が…することを助ける」という意味になります。
help の後には to不定詞・動詞原型どちらでもOKですが、動詞原型の方がインフォーマルです。

何を知る助けになるのかというと、
(know) whether they can get re-infected で「自分が再感染する可能性があるかどうかを（知る）」です。

and potentially even help doctors to better understand ～ で「また、潜在的にはさらに、医者たちが～をより良く理解する助けになる」です。
こちらの help には to不定詞がきていますね。
better understand で「より良く理解する」で、better はここでは副詞になります。

(understand) what type of protection we can expect from vaccines. で「どんな種類の防護効果がワクチンから期待できるかを（より良く理解する）」となります。
protection は「防護、防御、保護作用」です。
