Buoyed by demand driven by stay-at-home requests, で「～に押し上げられて、高められた需要に、ステイアットホーム要請で」です。
buoy ブーィは海に浮かぶ「ブイ」です。
動詞では「浮かせる」という意味なので、buoyed by ～ で「～によって押し上げられて、～に支えられて」という意味になります。
demand driven by ～ で「～によって駆られた需要」です。
drive の元の意味は「～を駆り立てる、突き動かす」という意味ですので、ここでは demand が「～によって高められた」という意味合いになります。
by stay-at-home requests で「ステイアットホームの要請」です。
コロナの蔓延を防ぐためにみんな家から出ないように、という行政による要請のことですね。

sales of the portable console have reached 68.30 million で「そのポータブルゲーム機の販売数は6830万台に達した」です。
sales of ～ で「～の売上、～の販売数」という意味になります。
the portable console「そのゲーム機」です。記事内で前述されている Switch のことになります。
テレビゲーム機本体のことを英語では console と言います。
Switchやプレステ、Xboxなどのことです。
もともとは機械などを操作するためレバーやボタンなどがついた「操作台、操作卓、制御パネル」という意味から来ています。
パイプオルガンの演奏台もコンソールと言いますね。
million は100万ですので 68.30 million で 6,830万となります。

since its 2017 release, で「同ゲーム機の2017年のリリース以来」です。
Switch 発売から3年もたっているんですね。

surpassing the 61.91 million units set by the Famicom game console で「ファミコンによって打ち立てられた6,191万台という記録を抜いて」です。
現在分詞の分詞構文となります。
surpass は「～を超えて」です。
接頭語 sur- は「上の、超えて」という意味になります。
the 61.91 million units set by ～ で「6,191万台（と言う記録）、～によって打ち立てられた」です。
set by ～ で「（記録が）～によって打ち立てられた」という意味になります。
例：beat the previous record set by ～「～が打ち立てた前の記録を破る」

also known as the Nintendo Entertainment System で「Nintendo Entertainment System（NES）としても知られた」です。
known as ～ で「～として知られた」です。
「ファミコン（ファミリーコンピューター）」は実は日本語名で、英語圏では NES(Nintendo Entertainment System)という名前で販売されていました。

that was launched in 1983. で「（それは）1983年に発売された」です。
launch ローンチは何度も登場していますが、
もともとの意味は「ミサイルや矢などを放つ」で、そこから「サービスを開始する、商品などを発売する」という意味でもよく使われます。
