で「『あれは神だ』と。（ちょっとここで）興味深い歴史的な補足情報です。昔、ムーア人が南スペインに侵攻したとき、彼らはこの慣習を一緒に持ち込みました。そして発音が数百年かけて変化します。『アラー、アラー、アラー』から、『オレー、オレー、オレー』へと。それは今でも闘牛やフラメンコなどで耳にしますね。」という意味になります。

Curious historical footnote: で「ちょっとここで）興味深い歴史的な補足情報です。」という意味です。
curious キュァリアスは「興味をそそる、興味深い、おもしろい」という意味の形容詞です。人やどうぶつに対して使えば「好奇心旺盛な」という意味になります。
例：curious fact「面白い事実」、curious cat「好奇心旺盛な猫」
footnote は「脚注」です。本や教科書などのページ下部にある補足情報的なものです。
そこから、本筋とは少しそれた「小話、小ネタ、おまけ情報」という意味になります。

when the Moors invaded southern Spain, で「ムーア人が南スペインに侵攻したとき」です。
the Moors で「ムーア人」です。北アフリカのムスリムのことです。

they took this custom with them で「彼らはこの習慣を一緒に持って行った」です。
take ～ with them で「持参していく」という意味の言い回しです。
例：I will take my lunch with me today.「今日はお弁当を持っていきます。」
they とは the Moors を指します。

and the pronunciation changed over the centuries で「そして、その発音は、変わった、数世紀の間に」です。
pronunciation プラナンスィ[エ]イションで「発音」という意味の名詞です。
動詞形は pronounce プラ[ナ]ウンスで「発音する、発声する」です。
名詞形になるときに、綴りで o が無くなるので注意しましょう。
over the centuries で「数百年にわたって、数世紀にわたって」です。

どう変わったかというと、
from “Allah, Allah, Allah,” to “Ole, ole, ole,” で「『アラー、アラー、アラー』から、『オレー、オレー、オレー』へ」です。

which you still hear in bullfights and in flamenco dances. で「（それは）今も耳にする、闘牛やフラメンコで」です。
bullfight は「闘牛」ですね。bull は「雄牛」です。去勢されていない雄牛なので攻撃的です。
牛の種類ではほかにも cow「乳牛」、ox「役牛（去勢された雄牛）」などがよく使われます。

それではまず文節に分けて日本語に訳し内容を理解して下さい。
