Pokemon is inspired by ～ で「ポケモンは～のインスパイアを受けている」です。
inspired by ～ で「～による刺激で着想を得た、～からアイデアが生まれた」という意味の言い回しです。
名詞形は inspiration インスピ[レ]イション「刺激、鼓舞、創造性、ひらめき」です。

the childhood tradition of collecting bugs で「（例の）子供時代の伝統、昆虫採集という」です。
この of は同格の of で「～という…」と訳出できます。
childhood tradition で「子供時代の伝統、子供時代の習わし」です。
誰でも一度は通る道・慣習という意味合いです。
collecting bugs で「虫を集めること、昆虫採集」です。
bug は「害虫」とかコンピューター用語で「バグ、不具合」などという意味もありますが、ここでは単純に「虫」という意味になります。

hot and humid で「蒸し暑い」です。steamy や sultry, muggy などとも言えます。
summer holidays で「夏休み」です。連休は holidays と複数形なります。

and part of its enduring appeal is ～ で「また、その色褪せない魅力の一部は～にある」となります。
part of ～ で「～の一部、～の一つの要素として」です。
its enduring appeal で「それの不朽の魅力」です。
its の「それ」とは Pokemon または collecting bugs を指しています。
enduring appeal で「いつまでも色あせない魅力、長続きする訴求力」です。
enduring エン[デュ]ァリングで「不朽の、長続きする、なかなか消えない」という意味の形容詞です。
動詞形は endure エン[デュ]ァで「持ちこたえる、～に耐える」です。

その魅力の一部は、
its simple goal で「そのシンプルな目的」です。

:（コロン）で「それはすなわち」
to catch them all で「それらすべてを捕まえること」となります。
them は bugs を指しています。
