で「ルソーなどの人文主義の思想家たちは、我々に以下のように説いた。我々自身の感情や願望こそが、究極的に意味を与えてくれるものだと。そして、それゆえに、我々の自由意志こそがあらゆるものの中で最高権威なのだと。」という意味になります。

Humanist thinkers such as Rousseau で「ルソーなどの人文主義の思想家たち」です。
humanist で「人文主義者」となります。
現在の日本ではヒューマニズムと言えば「博愛主義、弱者救済主義」という意味合いで使われることが多いですが、
元々は、ルネサンス時代から始まった「（神ではなく）人間を中心とした世界観」のことです。
such as ～ は「～などの」という意味の言い回しです。
Rousseau は Jean-Jacques Rousseau で18世紀のフランスの哲学者「ジャン＝ジャック・ルソー」のことです。
個人の自由を主張した思想家です。

convinced us that ～ で「私たちに、～だと説いた」です。
convince は「～を説得する、～に…だと言い聞かせる」という意味の動詞です。
例：convincing explanation「説得力のある説明」

何と説いたかというと、
(that) our own feelings and desires were the ultimate source of meaning で「私たち自身の気持ちと願望こそが、究極的な意味の源泉だ（と）」です。
our own feelings and desires で「私たち自身の気持ちと願望」です。
source of meaning で「意味の源泉」で「意味を与えるもの」という意味合いです。
例：source of meaning in life「人生に意味を与えてくれるもの」
ultimate アルティミトゥで「究極的な、最終的な」という意味の形容詞です。

and that ～「そして～だと」

our free will was, therefore, the highest authority of all. で「私たちの自由意志が、それゆえに、あらゆるもの中で最高権威であると」です。
free will は「自由意志」です。
will はここでは名詞で「意思」という意味になります。
authority ア[ソ]ーリティで「権威、権力」です。

それではまず文節に分けて日本語に訳し内容を理解して下さい。
