で「私の関心はデータではなく、世界です。そして世界の進歩の中で、数値で確認できる部分はほんの一部です。その他の人権や女性の権利などは、数値では測ることが非常に難しいものです。」という意味になります。

ファクトフルネス出版の後、世間から data guru（データの第一人者）と言われること対して、私はそう呼ばれることが好きじゃない。と言って、この内容が続きます。

My interest is not data, で「私の関心はデータではない」です。
interest はここでは名詞で「興味、関心」です。

it’s the world. で「それは世界です」です。
it は my interest を指しています。
私の関心は「データ」ではなく「世界」だ、といういことです。

And ～「そして～」

part of world development you can see in numbers. で「世界の進展の中での一部分だ、数字で確認できるのは」です。
ここは、It is ～ that … の強調構文の it is が省略されていると考えればいいのですね。
(It is) part of world development that you can see in numbers.
人が数字の中に確認できるのは、世界の進展の一部（にすぎない）なのだ。
という意味合いです。
強調を解いて元の語順に戻すと以下のようになります。
You can see part of world development in numbers.
numbers は数値データです。

Others, like human rights, empowerment of women, で「その他の部分、人権や女性の権利など」となります。
この others は、先ほどの part of ～「～の一部」を受けて「その一部以外は」つまり「大部分は」という意味です。
世界の進展には数値で測れるものもはほんの一部で、その多くは数値では測れないものだ、ということです。

それらは、
it’s very difficult to measure in numbers. で「数字で測ることが非常に難しい」です。
it is ～ to do … の構文「…することは～だ」です。

それではまず文節に分けて日本語に訳し内容を理解して下さい。

My interest is not data,
わたしの興味はデータではない

it’s the world.
世界だ

And part of world development
世界の進展の一部分（だけだ）

you can see in numbers.
人が数値の中に確認できるのは

Others,
その他の部分は
