で「その上海のガンダム像の顔と手は、巨大モニターに移されるアニメーションと音楽に反応して動くよう設計されている。土曜日から、毎日1時間に数分の間、稼働される予定だ。ガンダム（原作テレビシリーズは1979年に始まった）は、続編作品やスピンオフ、プラモデルやＴＶゲームなど、世界的に成功したメディア・フランチャイズを生み出している。」という意味になります。

The Shanghai statue’s face and hands are designed to move で「その上海の像の顔と手は動くように設計されている」です。
The Shanghai statue は記事中で前述された上海のガンダム像を言い換えて表現しています。
be designed to ～ で「～するようにデザインされている、設計されている」です。

in response to ～ で「～も反応して、～に応じて」という意味のコロケーションです。
何に応じて動くかというと、
animation and music displayed on a large monitor で「アニメーションや音楽（に応じて）、大きなモニターに映し出された（アニメーションや音楽）」です。
大型モニターに移される映像と音楽に応じてガンダムの顔と手が動くということですね。

Beginning Saturday, で「土曜日に始まって、土曜日から」という意味です。
Beginning ～ は動詞 begin の分詞構文としても、また前置詞としても解釈できますね。
このように、もともとは分詞構文だったものが慣用化して前置詞になった例として、
during ～, including ～, following ～, regarding ～, concerning ～ などがあります。
※訂正：上記は間違った解釈でした。beginning に続く Saturday が名詞ではないので前置詞にはなりませんね。訂正させていただきます。大変失礼いたしました。

the statue will be activated daily で「その像は稼働される、毎日」です。
activate は「アクティベートする、稼働させる、活性化させる、活動を開始させる」という意味の動詞です。
名詞形は activation「起動、（ソフトウェアなどの）有効化」
例：activate a motor「モーターを起動する」、activate brain「脳を活性化する」
daily は「毎日」という意味の副詞です。
every day, each day とも言えます。
for a few minutes every hour で「一時間ごとに数分間」となります。

Gundam has spawned a globally successful franchise で「ガンダムは生み出している、世界的に成功しているメディア・フランチャイズを」です。
spawn ス[ポ]ーンは「（水生生物が）卵を産む」から「（新しく）生み出す、状況などを作り出す、引きおこす」という意味になります。
例：spawn a new word「新語を作り出す」
franchise はコンビニなどの「フランチャイズ、営業販売権」という意味もありますが、
ここでは media franchise, media mix のことを指しています。
ヒット作に乗じておもちゃやゲームなどを出す手法のことです。
ディズニーやキティちゃん・ポケモンなどが有名ですね。

sequels, spinoffs, plastic models and video games. で「続編、スピンオフ、プラモデル、テレビゲームなど」です。
フランチャイズの例を挙げています。
sequel [スィ]ー・クォは「続編」という意味です。
ヒット映画のパート2、パート3 などがそうです。
spin-off は「スピンオフ、派生作品」で、スピンオフはすでに日本語になりつつありますね。
本作では脇役だったキャラクターを主人公にした「～外伝」などのことです。

それではまず文節に分けて日本語に訳し内容を理解して下さい。
