As you know,「知っての通り、ご存じの通り」

about 15% of the goods and services in the US が主語で「およそ15％、商品とサービスの、アメリカでの」です。
goods and services は「商品とサービス、物品とサービス」という意味の言い回しです。
are sold「～は売られている」
via ～「～を通して」です。
via ヴィアはヴァイアと発音する人もいます。
catalogs over the television で「テレビショッピング、テレビを通してのカタログ販売」です。
over ～（メディア） で「～を通して」という意味になります。
例：over the radio「ラジオで」、over the Internet「インターネットを通して」

All that’s going to go on the web で「そのすべてがウェブの上に行く」です。
go on ～ で「～の上にのる」です。
例：go on TV「テレビで放送する、テレビに出演する」
最後の and more は「さらに」ですが、ここでは about 15% よりももっと多くがそうなるだろう、という意味です。

Billions and billions, で「数十億」です。
billion は「10億」です。
tens of billions となって「数百億」です。
～ dollars worth of goods and services で「～ドルもの商品とサービス」となります。
ちなみに、このインタビューが行われた’95年の前年1994年にジェフ・ベゾスがワシントン州でアマゾンを創業しています。
2020年のアマゾンの売上が3800億ドルなので、ジョブズの予想を大幅に上回っていることになります。
