で「より平和な時代には、ウクライナのドローン愛好家たちは、自分のドローンを空に飛ばして結婚式の撮影をしたり、大豆畑に肥料をまいたり、遊びで他のドローンとレースをしたりしていた。しかし今、自分たちの国がロシアの侵略を撃退できるように、自らの命を危険にさらして義勇軍を組織する愛好者たちも出てきている。」という意味になります。

In better times, で「（今よりも）よかった時には」です。
in ～ times で「～の時代には」という意味の言い回しです。
例：in ancient times「古代には」
better は good の比較級で、何と比較されているかというと、than now「（戦時下の）今よりも」ですね。

Ukrainian drone enthusiasts flew their gadgets into the sky で「ウクライナのドローン愛好家たちは、自分たちのそのガジェットを空に飛ばしていた」です。
drone enthusiasts で「ドローン愛好家たち」です。
drone「ドローン」は、もともとは「ブーンという蜂が飛ぶ音」からできた言葉です。
enthusiast で「熱心な人、ファン、愛好家」です。
例：My father is a jazz enthusiast.「私の父はジャズの大ファンだ。」
flew は fly「～を飛ばす」の過去形。
fly their gadgets into the sky で「自分たちのそのガジェットを空に飛ばす」です。
their gadgets は繰り返しを避けるための drones のパラフレーズとなっています。

何のための空に飛ばしていたのかというと、「～, ～ or ～」の列挙形式で３つ列挙しています。
to photograph weddings, で「結婚式を撮影するために」です。
photograph がここでは動詞で使われて「～を撮影する」という意味です。
もしくは、
fertilize soybean fields で「大豆畑に肥料をまく（ために）」です。
fertilize で「肥料を与える」です。
例：fertilizer「肥料」
soybean は「大豆」です。ちなみに大豆が西洋で知られたのは最近で soy の語源は日本語の「しょうゆ」だそうです。

もしくは、
or race other drones for fun. で「遊びで他のドローンと競争をする（ために）」です。
race ～ で「～と競争する」という意味の言い回しです。
例：I’ll race you to the station!「駅まで競争しよう！」

Now「（しかし）今は」
some are risking their lives で「その一部の人たちは自分の命を懸けている」です。
some は「一部の人たち」、some of the drone enthusiasts です。
lives は life「命」の複数形なので発音はリヴズではなくライヴズとなります。

by forming a volunteer drone force で「ドローン義勇軍を組織することで（命を懸けている）」です。
form は「～を形作る、～を形成する」です。
volunteer force で「義勇軍、自ら志願しての軍隊」です。

to help their country repel the Russian invasion. で「自分たちの国がロシアの侵略を撃退するのに役立つために」です。
help ～ …（動詞原型） で「～が…するのを助ける」の言い回しです。
their country は「自分たちの国」つまりウクライナを指しています。
repel ～ で「～を追い払う、～を撃退する、水などをはじく」です。
例：bug repellent「虫よけスプレー」

それではまず文節に分けて日本語に訳し内容を理解して下さい。
