で「そして私たちの脳はこれらの全ての仕事を、音楽を聴いた瞬間とそれに併せて足を踏み鳴らし始めるまでの間のほんの一瞬のうちに行います。しかし、科学者たちが音楽を聴く人の脳から、音楽を奏でる人の脳を観測することに目を向けた時、裏庭の小さな花火は大祝宴に変化しました。」という意味になります。

And our brains do all this work で「そして、我々の脳はこの仕事を全て行う」
all this work は前回の文の内容のことです。
in the split second で「ほんの一瞬で」という意味のコロケーションです。
split は「分割された、割られた」という意味ですが、ここでは second を強調して「微小な」という意味合いです。
between ~ and … で「~と…の間」です。
何と何の間かというと、
when we first hear the music and when our foot starts to tap along. で「私たちが最初に音楽を聴く時、と、足がそれにあわせてタップし始める時」です。

But「しかし」
when scientists turned from observing the brains of music listeners to those of musicians, で「科学者たちが音楽を聴く人の脳を観測することから、音楽を奏でる人の脳に目を向けた時」です。
turn from ~ to … で「~から…に目を向ける」です。
those of musiciansthe brains of musicians のことです。

the little backyard fireworks became a jubilee. で「裏庭の小さな花火が、大祝宴になった」です。
jubilee ジュビリーは「祝祭、祝宴」です。
つまり脳波の様子が、花火から大祝宴に変わった、ということですね。
