で「音楽を聴くことは、いくつかのなかなか興味深い活動に脳を従事させる一方で、演奏することは脳の全身運動と同等のものだということが分かったのです。神経科学者たちは、相互に入り組んだ驚くほど速い連続の中で様々な情報を同時に処理しながら脳の多数のエリアが光り輝くのを観測しました。」という意味になります。

It turns out (that) ～ で「～であることが分かった」という意味の言い回し。
that節の中が、while ～ と従属節から始まる形です。
while listening to music engages the brain in some pretty interesting activities, で「音楽を聴くことは、脳を、なかなか面白い活動に従事させる一方で」です。
while ～ は「～する一方で、～ではあるものの」という対比の意味の接続詞です。
listening to music が主語で「音楽を聴くこと」
engages the brain in ～ で「脳を～に従事させる」です。
engage ～ in … で「…に従事させる、…に関わらせる」です。
何に従事させるかというと、
in some pretty interesting activities, で「いくつかのなかなか興味深い活動に」です。
pretty はここでは「なかなか、まあまあ、結構」という意味あい。
その一方で（while ～）、
playing music is the brain’s equivalent of a full-body workout.「演奏することは、脳の、全身運動と同等のもの」です。
playing music が主語です。
the brain’s equivalent of ～ で「脳の同等のもの」です。
何と同等かというと、of a full-body workout で「全身運動と（同等）」です。
equivalent イク[ウィ]ヴァレントゥ はここでは名詞で「同等のもの、等価のもの、～に相当するもの」という意味になっています。
例：the equivalent of cash「現金に相当するもの、現金と同等のもの」
つまり脳が全身ワークアウトを行っているような状態であるということです。

The neuroscientists saw multiple areas of the brain light up, で「神経科学者たちは、脳の多数のエリアが、光るのを見た」です。
知覚動詞 see ～ do … で「～が…するのを見る」です。
例：I heard the bell ring.「ベルが鳴るのが聞こえた。」
multiple areas of the brain で「脳の多数のエリア」
light up で「光りを放つ、点火する、明かりがつく」です。

simultaneously processing different information で「同時に処理しながら、様々な情報を」です。
processing は、分詞構文ともとれるし、saw からの繋がりとも取れますね。
in intricate, interrelated, and astonishingly fast sequences. で「入り組んで、相互に関連した、驚くほど速い、連続の中で」です。
in ～ sequences で「～の連続の中で」です。
sequence は「シーケンス、連続するもの」という意味です。ここでは音楽演奏で楽譜を処理する流れ（シーケンス）を示しています。
どんなシーケンスかというと、
intricate, interrelated, and astonishingly fast で「入り組んだ、相互に絡み合った、驚くほど速い」です。

それではまず文節に分けて日本語に訳し内容を理解して下さい。
