で「今日、店の上司が、料理長として25年のキャリアを持つ私と、彼女の息子を入れ替えた。その息子は15年前に食品学の中等教育証を取っているけど飲食店で働いた経験さえない。私はここに座って、料理がひどすぎて手つかずのまま返却されるのを眺めている。うちの店はもうだめだ。 F*ck my life!」という意味になります。

my boss replaced me with her son で「私の上司が、私を、彼女の息子と、置き換えた」です。
replace ～ with … で「～を…で置き換える」という意味です。
me についての説明が挿入的に入り、
me, with my 25 years experience, as head chef で「料理長として25年の経験を持つ私」です。
her son の her は my boss のことです。女性の上司だということが分かります。
boss は「上司、社長、上長、上役」という意味です。
今回の文脈ではレストランなので、店のオーナーか雇われ店長かもしれません。

who has a GCSE in food studies from 15 years ago は her son を説明する関係代名詞節。
「（彼は）食品学のGCSEを持っている、15年前からの」です。
GCSE はイギリスでの「一般中等教育修了証」という意味です。
in food studies で「食品研究分野での」です。
and ～「そして」
hasn’t even worked (at) a restaurant before. で「レストランで働いたことさえない、過去に」です。

I’m sitting here,「私はここに座って」
watching our customers send food back untouched で「眺めている、うちの客たちが、料理を返却するのを、手つかずのまま」です。
because it’s so bad. で「なぜなら、それはとても不味いから」

This has ruined us. で「うちの店を台無しにしてしまった」です。
ruin ルーインは「～を台無しにする」という意味の動詞です。
例：ruin a plan「計画を台無しにする」
