in a recent interview with Kyodo News で「最近の共同通信とのインタビューの中で」
何と語ったのかというと、
(that) he was satisfied with ～ で「彼は～に満足していると」です。
be satisfied with ～ で「～に満足する」という意味のコロケーションです。
何に満足したかというと、
(with) the Group of Seven labor ministers’ statement from their meeting, で「先進7カ国の労働大臣たちの声明」です。
Group of Seven は「7カ国首脳会議」で、米国・英国・ドイツ・フランス・日本・カナダ・イタリアを意味します。
labor minister で「労働大臣、労相」です。
ministers’ と、複数形の名詞の所有格は s の後ろにアポストロフィをつけます。
単数の場合は、minister’s と、s の前にアポストロフィが付きます。

「先週末にわたって日本で開催された（その会合）」です。
held は hold の過去分詞形で、hold a meeting で「会議を開く」という意味のコロケーションです。

for mentioning the importance of issues such as ～ で「～などの問題の重要性に言及したことで」です。
ここでの for ～ は satisfied にかかって「～のことで、～の点で」という意味です。
例：praise A for B「ＡをＢのことでほめる」、Thank you for the compliment.「お褒めの言葉ありがとうございます。」
どんな問題の重要性について言及したかというと、
(such as) equal pay and labor equality between men and women. で「同一賃金と、労働上の平等、男女間の」です。
equal pay は「（同一労働に対しての）同一賃金」です。
