で「両親の車が道の角を曲がったや否や、私はすぐにドイツ語を捨て、古典文学への回廊へと走って逃げました。」という意味になります。

Hardly had ～ than … の文型で「～するかしないか内に…していた」という意味の言い回しです。
Hardly had ～ when … や No sooner had ～ than … などの類似表現もあります。

my parents’ car had rounded the corner at the end of the road で「両親の車が道の突き当りの角を曲がった（か曲がらないかの内に）」となります。
round はここでは動詞で使われて「～を曲がる」です。
than I ditched German で「（その内に）私はすぐにドイツ語を捨てた」です。
ditch は「～を捨てる、見捨てる、恋人などを振る」という言う意味の動詞。名詞では「溝、どぶ」という意味になります。
and ～「そして～」
scuttled off で「そそくさと走って逃げた」です。
scuttle ス[カ]トォで「慌てて走る、急いでいく、ちょこちょこ走る」という意味の動詞。
down the Classics corridor. で「古典文学への回廊に進んで」です。
down ～ はここでは「あっちのほうへ、（道などに沿って）先へと」という意味です。
the Classics で「古典（文学）」という意味になります。
例：Japanese classics「（日本の授業）古典・古文」
