で「詩やエピグラムを収集する人の多くはチェリーや牡蠣を食べる人と同じだ。彼らは最初は最高のものを選び出す、そして結局はすべて食べてしまう。」という意味になります。

Most of those who ～ で「する人の多くは」となります。
この場合の those は those people「それらの人々」という意味になります。

どんな人々かというと、
make collections of verse or epigram で「詩の一節やエピグラムを収集する（人々）」です。
verse は「詩の一節」です。
例：poem of 3 verses「三節できた詩」
epigram は「警句、エピグラム、風刺詩、寸鉄詩」という意味です。
まさにこの文そのものがエピグラムですね。
ウィットに富んだ鋭い洞察・観察眼・社会風刺・皮肉が特徴です。
シャンフォールはそのエピグラムで有名になった文筆家でした。

like men eating cherries or oysters で「～はサクランボや牡蠣を食べる人のようなものだ」です。

その心は、
they choose out the best at first, and end by eating all で「最初は最高のものを選ぶが、最後には全部食べてしまう」です。
choose out は「～を選び出す」です。
at first で「最初は、まずは」という意味になります。
and end by eating all で「すべて食べることによって終わる」です。

それではまず文節に分けて日本語に訳し内容を理解して下さい。
