on one note なので「一本調子で」となります。
note は「声の調子、話し方、響き」という意味があります。

スピーチ動画を見てみると、ジュリアンさんは実際にこの文章をロボットのように「単調」に話していますので是非聞いてみてください。

are really quite hard to listen to で「は、実に極めて聞きづらい（聞くに堪えない）」です。
really quite は「実に極めて、とても」という意味の言い回しです。
hard to listen to は「聞きづらい、聞いていられない」です。
hard to ～ で「～するのが難しい、～しがたい」という意味の言い回しです。

if they don’t have any prosody at all. で「もし全く韻律（プロソディ）がなかったら」です。
prosody は「韻律」でしたね。
発話のリズム、強勢、イントネーションなどのことです。

That’s where the word “monotonic” comes from で「それが monotonic という言葉のの由来です」となります。
That’s where ～ come from で「～がどこから来たか、～の由来」という意味の言い回しです。
例：Where did that come from?「それの由来は何ですか？」

monotonic は形容詞で「単調な」という意味です。
or monotonous, monotone. で「または、monotonous, monotone」です。
mono- は「一つの」という意味の接頭語になります。
mono（一つ）＋tone（調子）

それではまず文節に分けて日本語に訳し内容を理解して下さい。
