で「若さゆえの自信、よく知らいことから来る自信というものがある。しかし、ある時点で、俳優として、いろいろなことが分かり始める。そしてその時こそ『その恐怖』が始まる。」という意味になります。

There’s a confidence (that) ～ で「～という自信というものがある」です。
confidence カンフィデンスは「自信」です。
「信頼、信用」という意味もあります。

どんな自信かというと
(that) comes from youth and not knowing better で「”若さ” と “あまりよく知らないこと” からくる（自信）」です。
come from ～ で「～から来る、～に由来する、～を基にした」という意味です。
例：come from historical fact「歴史的事実を基にした」
youth ユースは「若さ」という意味の名詞（noun）です。
形容詞形は young「若い」です。
not knowing better で「よく知らないこと、無知」です。

But there comes a point when ～ で「しかし～する時点がやってくる」です。
there comes a point ～ で「～する点がやってくる、～するときもある」という意味の言い回しです。
a point when ～ で「～する時点」です。
それを境にして変化するポイント（時点）という意味合いです。

どんな時かというと、
when you do know better で「もっとよく知るとき」です。
know better で「よく知る、詳しくなる」です。

and that is when the fear starts. で「そしてそれが怖さが始まる時だ」です。
that is when ～ で「それが～の時だ」という意味の言い回しです。

このような経験値が低い人ほど自分を「過大評価」してしまう現象を「ダニング＝クルーガー効果」や「Mt.Stupid」と言ったりしますね。
