以下の三人です。

won the Nobel Economics Prize で「ノーベル経済学書を受賞した」となります。
win a prize で「賞を取る、受賞する」という意味の言い回しです。

for their work in the fight against poverty で「彼らの研究に対して、貧困との戦いの分野での」です。
この場合の work は「研究」という意味になります。
fight against poverty で「貧困との戦い、貧困問題解決に向けた取り組み」という意味合いです。

including ～ で「（その中には）～も含む」です。
