The difference between false memories and true ones is the same as for jewels: it is always the false ones that look the most real, the most brilliant.
で「偽りの記憶と本物の記憶の違いは、宝石のそれと同じである。本当らしく見えるもの最も光輝くものが、いつでも偽物なのだ。」という意味になります。

The difference between false memories and true ones で「～の間の違い、偽物の記憶と本物の記憶の」です。
difference は「違い」という意味の名詞です。
形容詞形は different となります。
false と true は対義語で「偽の」と「本物の」です。
例：false information「間違った情報、デマ、虚報」、false laugh「作り笑い」
true ones の ones は memories を指しています。

is the same as for jewels で「～は、同じである、宝石に関してと」です。
記憶の真偽を見極めるのは、宝石の真偽を見極めるのと同じだ、ということです。
same as for ～ で「～に関してと同じ」という意味になります。
例：It’s the same as for English.「それは英語についても同じことが言える。」
jewel は「宝石」です。gem ジェムとも言えます。

:（コロン）で「それはつまり～」

it is always the false ones that ～ で「～なのは、いつでも偽物のほうだ」です。
強調のための it ～ that … の形です。

どんなものが偽物かというと、
(that) look the most real, the most brilliant で「最も本物に見える、最もキラキラ輝いている（もの）」です。
look real「本物に見える」を最上級の形にして、 look the most real となります。
brilliant は「キラキラと光り輝く」という意味の形容詞です。
例：brilliant career「輝かしい経歴」

それではまず文節に分けて日本語に訳し内容を理解して下さい。
