で「マリリン・モンローとパメラ・アンダーソンの違いはそれほど大きくはない。驚くべきことだが、アメリカの男性、さらには世界共通の、美に関する趣味嗜好というものがあの当時と同じままだということだ。流行は変われど、私たちの美に対する考え方は変わらないのだ。」という意味になります。

The difference between Marilyn Monroe and the early Pamela Anderson is not that great.「マリリン・モンローと初期のパメラ・アンダーソンの違いはそれほど大きくはない」となります。
ヒュー・ヘフナー氏はグラビア雑誌『PLAYBOY』の発刊者です。
1953年の創刊号でマリリン・モンローのヌードを掲載し大ヒットしています。
パメラ・アンダーソンがPLAYBOYに登場したのは1989年です。

is not that great で「～はそれほど大きくない」です。
この that は副詞で「それほど、そんなに」という意味です。
例：that many people「そんなに多くの人たち」
great は「大きい」です。「偉大な」という意味でもよくつかわれますが、ここでは単純に「（程度・量・規模などが）大きい」という意味です。
例：There is a great possibility「可能性が大きい」

What’s amazing is that ～ で「驚くべきことは～だ」です。
amazing ア・[メ]イ・ズィングで「驚くべき、素晴らしい、すごい」です。

驚くべきはどんなことかというと、
(that) ～「ということ」
the taste of American men and international tastes in terms of beauty までが主語で「アメリカ男性の趣味嗜好と国際的な趣味嗜好、美に関する」です。
taste はものと意味は「味覚」ですが、ここでは味だけではない「趣味、嗜好、センス、審美眼」という意味になります。
例：taste in humor「笑いのツボ」、taste in music「音楽の好み」
ここでは in terms of beauty なので「美に対する好み」となります。
beauty はここではもちろん男性から見た「女性の美しさ」です。
have essentially stayed the same. で「本質的に同じままだ」です。
stay the same で「同じままでいる、変わらないでいる」です。
ここではマリリン・モンローの時代からパメラ・アンダーソンの時代に至るまで、それらは変わっていないということです。

Styles change, but ～ で「流行は変わるが～」です。
style は「流行、はやり、生活様式」です。
例：come into style「流行になる」、out-of-style clothes「流行遅れの服」
tastes「趣味嗜好」と styles「はやり、様式」が対比された形ですね。

but our view of beauty stays the same. で「我々の美に対する考え方は同じままだ」です。
our view of beauty で「私たちの美に対する見かた、考え方」です。
our view は our tastes のパラフレーズとなっています。

それではまず文節に分けて日本語に訳し内容を理解して下さい。
